Considering the health concerns relates to diet that go hand in hand with a Hashimoto’s diagnosis, you’d think pancakes would be off the menu. But as HeyHashi founder Pearl proves with this Hashi-friendly pancake recipe, that’s not the case! This recipe makes toddler (and grownup) approved pancakes that can be AIP with a few simple tweaks, and we think you’re going to love it!
Pearl’s Perfect Coconut Flour Pancakes
Makes 8 pancakes
4 eggs OR 1 cup applesauce (for AIP)
1/8 cup coconut oil
1/4 cup almond milk OR coconut milk (for AIP)
1/4 tsp sea salt
1/4 tsp coconut butter
1/4 tsp Bob’s Red Mill Aluminum-Free Baking Powder
1/4 cup Bob’s Red Mill Coconut Flour
Directions
Step 1: In a large bowl, whisk together eggs, oil and milk until well combined
Step 2: In a separate bowl, whisk or sift together the salt, baking powder and flour
Step 3: Add dry ingredients to wet ingredients and gently mix until it thickens and there are no clumps
Step 4: Ladle 2 tbsp to 1/4 cup of the batter into a hot skillet over medium heat, then flip once bubbles begin to form on the top.
